What is the best way to do your money. By that I mean should I bring stirling travelers cheques, cash or ATM card.
Which will give me the best rate.
The last time I was in Bulgaria, the wall had only been down 2 years and we got a much better rate from our ski instructors and other locals than banks.

Banks or hotel Daz- take sterling notes out not defaced or torn-
there are ATM machines though if you prefer to use them (talking about Borovets here like)
Same here in 1989 just before the fall of communism, although was a beach holiday and we used the lifeguards to change money. As far as I remember the actual exchange rate was 10lev to the pound but the government would give you 20lev ... lifeguards gave you 40lev!
Bugger all to spend it on and you had to have proof that you were taking home gifts to the value of the lev you had officially changed. There were dollar shops too, where you could only use sterling or US dollars, and locals ...

Anyway, to answer your question, ATMs! Take a few tenners to change just in case, but never had a problem with the cash machines out there. Any sorry fellow Scots, they only accept English notes!
I always bring cash (newish notes). Exchange rate at Gatwick on Monday was 2.02 with commission for transactions less than £250. In Bulgaria same day, I got 2.29 no commission.
