There are normally eggs, pasta, pizza, chips, vegetables, soup available at most places. I've managed in Bulgaria twice as a veggie without a problem.
This year I've got a bigger problem - veggie, but I can't have wheat either so that cuts out the pasta and pizza so it looks like chips with cheese or eggs every day for a week.
I managed too last year as a veggie but we were staying at the Malina Chalets. There is only one restaurant there but the food was excellent. In any case, I'm not very choosy, and as long as I eat something it's ok.
We're veggie, stayed at Hotel Pamporovo January 04, and the food was very limited we ended up eating bread and cheese every night, breakfasts were fine, the best food we had was at the White Hart. We're off to the Snezshanka on the 15th so hope the food is a bit better there. I'm not too bothered though as it's the skiing we're going for and the food and hot choc and brandy on the slopes was great !! have a good time !!
