re: cooking ham

Cook your turkey the night before. There is so much going on Xmas day who needs to be bothered with worrying if the turkey is OK. Then re-heat 45 mins prior to serving, with plenty of hot oil with a touch of brandy to give it a golden brown appearance and an extra flavour.

Do not wrap the turkey too tighly in foil, it does not allow the heat and juces to circulate and this often causes the turkey to be 'dry'.

If you really want to impress your friends and family, do your boiled carrotts like this:
Reduce a pint of cider by boilng for a long time, then boil up your carrotts as usual, but leave off a bit of cooking time then bung them in the cider for the remainding time. Drain and serve. You can even use the reduced cider in your gravy!! Delisious!!!!

The breast will be face down and the heat does not hit this part of the meat full on, hence the breast stay's moist. Turn the correvt way arpound about 30 mins from the end to ensure a nice golden brown colour. Lemons can be cut in half and placed inside the bird as ...

Lemons can be cut in half and placed inside the bird as another way of ensuring moist meat (this is more commonly known of course). Get somebody to help turn the bird and use washing up gloves otherwise its really difficult.
