Went to Boro for Xmas in 2003 stayed at the Samokov. It was my first time skiing so I can't judge if it was 'busy' or not but there seemed to be a good number of people about. After the second day all the ski school groups have dispersed over the mountain so its not that busy and the lifts etc can cope without too much waiting.
Xmas dinner is different, just remember you will be in Bulgaria not the UK so don't expect Turkey and Xmas pud but give it a try (after all you will have paid for ...

Nightlife - to tired to do any of that out side of the main hotel so I'll let others tell you about that
There was no snow up until about 15th December if memory serves me right so don't worry. Even when driving from Sofia on the bus there was no snow but when we got to the resort there was plenty. But every year is different but everyone is predicting a 'bad' (good for ski and boarding) winter. Fingers crossed for you and every one else who is going at the start of the season.
We found out the same thing about our flights, to Sofia from Glasgow. I believe Balkan holidays fly from Edinburgh to Plovdiv - not sure if this will be suitable for you.
