If you stick to the local brews and spirits you can find places that offer happy hour from early evening to midnight. Not sure which hotel you are in but Borovets isn't much bigger than 3 streets packed with bars, restaurants and clubs. I think a lot of people have their own favs but for sure as dbut states Bobby's will be popular this season. I guess it depends on what exactly you want from a bar............You can get a lot in Borovets if you want it

Go to Bobby's bar, tell them that you are the advanced party for Birthday bash and you just might get a free shot!!!
