Just wondering what currency is needed for a trip starting 30th Dec - will it be euros all the way after 1st Jan? And what about those last 2 days of December - will euros be OK then or not?

Also wondering about the E111 health insurance - will that become valid in Bulgaria on 1st January?

Why would you want to take Euros?

It's not their currency and is not likely to be for several years yet.

Take £50 in levs to get you started, the rest in clean sterling and/or cash cards.
