I am about 5ft 10 , what size snowboard do u think I will need

Depends weather you're a beginner or not. Just going on your height I would say anything between 150-160 would be OK but depends on your weight, ability, sort of riding and your boot size (more than a size 10 you want a wide board).

Seen a lot of guys judge it like ski's ... make sure it comes up to your chin, but doesn't go above your nose.

I'd agree with that - short board is easier to steer, long board is more stable at speed. So decide whether you're aiming at the half-pipe or the downhill Cool

Aim for about a 155 as a happy medium but make sure its wide enough to have not too much toe or heel over hang. If your learning a shorter board is easier to control. More important then the length is to get you correct foot forward, dont be conned into the myth that its always you strongest foot at the back I'm heavily right footed but have been riding right foot forward (goofy) for 14 years . Only other tip is once on the board remeber your board will always try and follow where your front shoulder is pointing.
