However, if December is the only time that you can go skiing/boarding then you have no choice but to take the gamble. My advice would be to find a high resort in the alps which would cost you a lot more but you will at least have better odds on your gamble or go to either bansko or Borovets and hope for the best. Probably best to go with an open mind in case the snow is truly rubbish.
You could have no snow in Jan to Mar and then a dump in april! Thats the way skiing goes you cannot guarentee it, conversly you canot guarentee sunshine in the Med in the summer but Late Jule/Aug you should be fine but Mid sept & early June/May could be hit & miss.
I guess with skiing if no snow then your kind of stuck but really then you can relax in the Spa's, go on trips play cards/walks/
Plenty to do, or take a board game like RISK that will keep you occupied.
Cannot wait to get there again this coming season - might go for 2 weeks thats job permitting & if the Mrs can handle it.
Will be taking a lot of DVD's for the evening, have an early ish meal in a nice resteraunt then saunas swim then wine, beers and cosy film & spin the bottle.

I think your making a mistake that early the season doesn't normally start till around 18th of Dec and then there still could be no snow, go to a glacier resoft in the alps its not expensive in Nov- Dec, also alot of the sites that show snow history are travel agents and tell porkies
