Ive been on a dry slope a few times and can nearly stop!! I say nearly I suppose i mean I fall over sometimes or end up going backwards a short distance, sometimes i can actually stop correctly. I can nearly Parallel ski not from a great height as Ive only been on dry slope and didnt feel I had full control.
Now when I booked the Hollybobs I told the lady all this and shes pit us down as INTERMEDIATE not BEGINNERS. Im not a total beginner I just need a bit more guideance.
My question ...

Go for it Andy. Push yourself. You can do it! What's the Hollybobs? Are they a 4 piece made for tv group in coloured tights like the Wiggles, only they're Bulgarians?
Andy on your first day if you decide not to go in the beginners class you will graded on your turns and put into a group accordingly. By the sound of it you need to go into learn to ski.
If you have trouble stopping on a dry slope then you'll struggle to stop on snow. You'll find snow faster,ok if there's fresh snow it is easier to stop, but you need the benifits of learning how..
Please understand i'm no pro far from it but thats my advice..
You'll also find they will grade you when your out there so if you are out of your depth so to speak they'll put you in a suitable class..
Ohhh I would say you are way out of your depth. As beginners in Bulgaria you will be taught to stop (without falling over), basic turns and more advance turns (like step turns). They progress you quickly anyway from Nursery slope to more advanced slopes with their no nonsense approach. If you dont know what a snowplough or a step turn is you need the beginners group! But if you fancy going down the top red run on your arse go for it!!
You'll love it what ever you decide but I'm sure you'll have less bruises (and brown pants) in the beginners group!
