Having skied Bulgaria for over 20 years now, there seems to have been a big shift in the season as to when the major snowfalls come, especially Pamporovo.
Back in the 90's it was always fantastic from Xmas onwards and we always had fantastic skiing holidays there in late January.
However over the last 3 or 4 years, early season skiing conditions has been really disappointing and many early travellers have returned vowing never to go again due to the lack of snow.

We are currently seeing some really good conditions in Pamporovo and this has been consistant over the last few years. Big falls in February/March rather than in December/January.
So my advice if you want to take it, would be to book late season next year for a better chance of decent snow. Of course I cannot guarantee it - nobody can, but there certainly seems to be a sure pattern of this being the case and I for one will not book to go before late Feb next year.
If your asking me what hotels to choose, well there are improvements being made each year and standards have improved immensely.
Orlovetz in my opinion is probably the best hotel in Pamporovo, Mourgavets and Perelik are not too far behind and are well placed for the resort Centre. The Castle has had great reviews this year but is a little bit away from the night action.
Any of the above I can recommend as very good all round hotels.
I have tried all 3 main resorts and personally I have to say Borovets was my least favourite. That's not to say it is bad - far from it, but I have to have a favourite and a least favourite and that is my opinion.
For me, Bansko is great for skiing only, with great slopes
and good lifts once you have made your way up the Gondola. Apart from that I found it very over developed and much more spread out than the other resorts.

Pamporovo is obviously my favourite especially as they are adding to the slopes and adding more lifts. Chepelare is only 15 minutes away which we always go to for at least 1 day. For me Pamporovo is by far the most friendly resort with good nightlife whether you want a quiet meal or a lively nightclub.
I would certainly recommend you give it a try, this year will be my 16th year in Pamporovo - so it must be doing something right!
Last march was absoultely horrendous in Pamporovo snow wise. I can confirm t his as i was there and as you say on that experience i will not be returning. So if dec and jan are not good for snow, and march is not good as i can confirm from personal experience, is feb the only month you can ski in pamps. What a disgrace
But beginning of Jan was brilliant last year and this year was poor. March last year was poor and looks good this year. I think the key is to go last minute. With the current level of availability in the resorts this should not be a problem.
