Flows can be difficult - either too loose or too difficult to put on if you have them tight.
Step ins are a pain - I had the burton ones for a while. great for UK dry slopes, awful for snow. They get iced up and don't give the same support.
Go for straps every time as a beginner. They're by far the most common. Try different ones if you must later on, but to start with stick to the sensible option!
