In Boro I have only ever worn a T-shirt, fleece with a bog standard Berghaus waterproof, same one I wear walking the dog. Buying big puffy ski jackets that you will never wear the rest of the year is an expensive waste of cash you could be using apres ski
As many others have said, layers is the way forward. A good wicking layer first (long sleeve running top type of thing) will keep moisture away from your skin so if you get a bit sweaty you won't get cold when you stop for a beer. ...

I have skiied Boro in just a T-shirt one day which was lovely.
If you were going to higher resorts or US/Canada this advice would be useless as their temperatures can be nasty but Europe is pretty nice most of the time.
Really don't worry to much, as with the above posts, I've had top of the line stuff in the past costing an arm and leg and to be honest I now wear dare2b's higher end stuff, still very cheap and does the job. I wear a long sleeve base layer under it and very occasionally a thin fleece
If your used to working outside it will not be a problem in Bulgaria.
Tk maxx is pretty good for snow gear, they even have a section on their website which I have bought from. I have bought high end burton clothes before, and tbh it doesn't make much differance, it would only be worth wearing if you do it everyday of the year. I wouldnt go to the extreme of a heavy duty coat, as unless it's -30 and your walking around not sking/ boarding there is no point. Just get some good thermals, which togg 24 do resonable, even aldi sell aswell. Then layer from there.
There's some good websites selling previous years gear such as shore.co.uk, absolute-snow, sail and ski etc but as everyone says layers are good as I tend to steam up in my warmest jacket. If you are snowboarding get 10,000mm trousers as I have ended up wet from sitting down too much in a 5000mm pair after a couple of trips.

A friend of mine (skier) doing his 4th full season was wearing a pair of Slazenger golf waterproof trousers with joggers underneath and a Regatta cagoule with layers when I caught up with him over Christmas. So depending on budget lots of options and more money for apres. Have fun!
