Monty you've got it in one. If you bothered about the cost go the places that don't rip you off, have a mooch around the town and after 30 minutes you can weigh up where's expensive and where isn't. I eat in the Belfry 2 once - expensive and poor food (cheap beer mind but for me that not enough) so I won't bother again, the next night I eat In the Tavern Perelik - main course for two £8 (20 Lev) and great food to boot.
Still a reasonably cheap resort if you chose the right places.
I just came back from Boro and found some fantastic places to eat that were very welcoming in smaller towns and villages around boro, eight of us ate and drank all night in Dolna Banya for £6 per person, try not being such tourists and you wont pay tourists prices.

Totally agree with the increases most have experienced especially in Boro, now in Bansko have experienced similar. All seems doom and gloom but consider this. Ultra cheap prices are definately still available, restaurants and bars providing good service, friendly staff and reasonable prices are out there to. The business culture will change in BG with the advent of outside interests starting businesses, competition will make for a better experience for the average punter. How long this will take who knows but i assure you it is happening in a small way, check out the Alpina in Boro, great prices, good service, fantastic product and not popular with other bars, got to be a good sign
It is happening in Bansko as well, as more bars and restaurants open competing for trade they have to offer something to bring the custom. A note about the new runs here in Bansko, Challin Valog, very challenging black paired with a black into a sweeping red serviced by a high speed four man chair, absolutely fantastic especially in the recent good conditions, the black unpisted (0.5m snow) was as good as i have skied anywhere including Italy, Austria, France etc. We are seeing investment which is reassuring, plans now for the old red chair on Akaderrika to be updated, the avalanche protection installed and presto, perhaps one of the best reds in the resort and access to another peaks off-piste.
I am definately not dismissing anyones comments, there definately is a problem, lets hope just normal market forces can effect a change, especially as we are the customer, support those who are trying to make changes.
